  1. Cut the thinner belly and tail meat away (These can be used at another time for frying). Cut the fillets in half. Place the halves in Hawaiian marinade for a few hours, or overnight if desired. Spray a baking dish with cooking spray. Remove the fillets from the marinade and place the fillets in the baking dish. Season fish with lemon pepper. Broil until done (6-8 min, depending on thickness of fish) and turn off the oven. Remove the fish from the oven and sprinkle with your favorite cheese. Place dish back in oven until the cheese is melted. This can also be done on the grill using foil or a grilling basket.
